Friday Night Eats: Individual Chicken Pot Pies

Friday night was a different one for me.

First off, I fell asleep for about an hour at 4pm. Clearly I was in for an exciting night. I woke up and went to Whole Foods for some dinner goodies because I knew AR's flight wouldn't get in until 10pm.

I struggled when I walked in to Whole Foods, because 5pm is a sad time to grocery shop. It is a little pathetic to walk around with wine at 5 on a Friday, but too late for coffee. I caved and went with coffee (better to be caffeinated than be the sad person drinking as they shop for kale on Friday night).



I got all of the goodies to make a favorite meal of AR's: Chicken Pot Pie. I went with the simple version and grabbed a rotisserie chicken seasoned with salt & pepper.



Normally, I cook my own chicken breasts in the oven or poach them on the stove top, but this made it so much faster and the chicken was so flavorful.

I also cheated majorly and bought a pre-made pie crust. I have never done this before, but I thought it tasted AMAZING and it was so fast. Pre-made crust for the win. You could make your own crust, make a biscuit topping, buy a biscuit dough/mix, or even use pre-made pizza dough. All of these options work great.

I enjoyed my pot pie on the couch with a glass of red wine and the movie Bride Wars. A perfect Friday in, if I do say so myself!


Individual Chicken Pot Pies

Ingredients 
filling
4 T. butter OR oil (I use a mix of both)
1 med. yellow onion, chopped
3/4 c. carrots, pealed and chopped
3/4 c. celery, pealed and chopped
1/2 c. mushrooms, chopped
3-4 c. shredded chicken
1/2 t. dried sage
1/2 t. dried thyme
salt and pepper, to taste
3 1/2 c. chicken broth
1/3 c. flour
1/2 c. frozen peas
1/3 c. heavy cream or half & half

crust
1 package of refrigerated pie crust dough (enough for 2 layers)
OR this recipe for pie crust.
extra flour for rolling
1 egg
1 T. water

Preheat over to 375*. Heat oil in large pot over medium heat. Add onion and sauté until slightly soften, for about 3 minutes. Add remaining vegetables and cook until slightly soft, about another 5-6 minutes. Add shredded chicken and seasonings.
Sprinkle flour on top of the mixture and stir in. Let the flour cook for 2 minutes, then pour in broth. Add peas. Continue to cook over medium heat until thickened, about 10 minutes. Add cream, stir to combine, and remove from heat.
Place individual ramekins** (five 2 c. or 8 1.5 c.) on a large baking sheet. Roll or fold out dough onto a floured surface. Using ramekins as a guide, cut dough into circles slightly larger than the top of each dish. Set dough aside.
Scoop filling into each ramekin, but do not fill completely. Once evenly divided, place dough circles on top of each dish and press down on edges. Beat egg with water to make an egg wash. Generously brush tops of each pie with egg wash.
Bake for 25-30 minutes, or until dark golden brown, rotating pan half way though. Let cool for 10 minutes before serving.
To freeze: Let cool completely. Wrap each pie dish in plastic wrap, and then tightly with foil. Free for up to 1 moth.

**I like to make my pies in several sizes - some for AR and some for me. Last week, I did two larger pies, four medium pies, and two itty bitty pies to take in my lunch!

You could make this beautiful by crimping the edges, but I call it rustic and just leave the edges ragged.



Enjoy! These are an excellent way to stock your freezer with some pre-made dinners. Just pop them out in the morning and let them thaw in the refrigerator. By dinner time, they will be ready to heat in the oven!

Friday Confessional

Hello all! Can someone tell me how August is already over? What the heck happened? One minute, everyone was wearing sundresses, and now the girls at school are wearing boots (It is still 90*+ here, so they might be a little ahead of themselves...).

I am sharing some of my Friday Confessions today with the beautiful Leslie at A Blonde Ambition. Yesterday I shared my Fall Style Must-Haves, so I'll keep with the seasonal theme today.



I confess.... that I do not love PSL. There. I said it. Everyone is all excited about the pumpkin spice latte being released early, and I am still sitting here asking for a soy misto. Every once in a blue moon, I might reach for a chia latte, but I really don't ever want a PSL. Sorry :(

I confess... that I am dying to paint my nails a dark color. Is it too early?

I confess.. that I do not understand fall style in the south. This is my fourth September in the South, and I am still confused. Back un north, is was easy. We grabbed swears and boots and it was perfect. Here, I could grab sweaters and boots, but I would be sweating and gasping for air.

Speaking of the South, I confess that... I miss Texas. I am going there for a night next week and once the trip was planned, I got SO excited. I guess I missed the state more than I imagined.

I confess that... I skipped my run yesterday. Which means I had to do it this morning (Friday is usually my rest day). And I took FORTY-FIVE minutes to get out the door. You could say I have a serious case of "I-don't-ever-wanna-run-again." Please, fall temperatures come quickly.

I confess that... I had a serious gab sesh with my girlfriend Kathryn last night. AR called during it and after talking to him for a few minutes, I was like "I really have to go, Kathryn and I were discussing Disney's High School Musical." Thank heavens for girlfriends :)

{Fall} Sweaters, Boots, & Jackets

The blog world is blowing up over autumn. 

Here it is, not even September, and we all want to make pumpkin muffins and wear sweaters. 

I am no different, but living in Atlanta, I know I have a long wait until the sweaters come out. Until then, I am baking pumpkin treats and pinning fall looks to my Pinterest boards (<-- thank heavens for my imaginary life on Pinterest). 

This fall, I have several must-have items

Majorly distressed denim. I just really love big sweaters with faded, distressed denim. 

Dark nail polish. Yes, it shows chips faster than anything, but it is just so beautiful. This is Carry On, by Essie. It is one of my absolute favorites. 


A fur vest. I confess, I never bought one last fall and regretted it deeply. This year, a fur vest is a MUST for me. 


Sweater & Scarf combos. I could probably wear a different scarf every day of the month and not have to repeat. I own so so many, yet I still love them. I'll be shopping for more :) 




This is from Anthro and I am obsessed. LOVE. 
 Rain boots. I bought my Hunters last winter and they were the most-worn item i my closet, hands down. I have worn them so many times, and I know this fall will be no different. It rains so much in Atlanta, perhaps I should get another pair!

I have this color and I feel like they are so perfect with everything.

Marathon Training: Wk 12

So I didn't fall this week, which means maybe I should consider is a success. Though, as I sit at school, my wound on my left knee is bleeding through my white pants right now, which is attractive. Cuts on knees take forever to heal.

M - rest and felt bad for myself because my hands were so cut up.

T - 5 miles. I went to the gym for this and almost stopped. I started hobbling through the run and wondered if I could make it. Sure enough, a few miles in and I felt better. Sometimes you just have to push.

W - 8 miles. It was long and after 5 hours of interviews. About a 9:15 pace.

Th - 4 miles, nothing interesting about them.

F - 8 miles. This was also long and before a day of interviews. I ran at 1pm and hand not had lunch yet, so by the time I was done, I was a little light headed. I was supposed to do this Saturday, but my schedule wouldn't allow. My legs were pretty sore, by I was surprised by the amount of energy I had!



S - Rest

S - 18 miles. Oh. My. Gosh. This was really horrendous. It was already 78* when we left and I had little sleep the previous two nights. I also had like zero fueling options at home. The first 12 miles were fine, I stopped to refill my water bottle at mile 13 and went to the bathroom (thank you Starbucks!!!). Then it went downhill. 

AR had a lot of pain from his 8 miles the day before, so we walked for a minute, which completely derailed our run. Isn't it weird how a walking break can be so bad for your run?

We had been holding an okay pace, considering the heat and 65% humidity, but we had trouble getting back up to speed. We made it through another 3.5 miles and then both were completely done. It was so hot at that point and I wanted to just go home. We run-walked the last little bit and were SO relieved when our watches chirped for 18.

Poor AR was so nauseous after our run... We pulled on compression gear and rested for a bit... I made a protein shake and had no appetite.

We finally went to brunch at like 2pm and then didn't eat again until almost 9pm. Somehow, running in the heat just kills my appetite. I try to make up for it the day afterwards though! (can you say peanut butter??)

Not my favorite week, but all we have left are two 20 milers and a few shorter runs!! I am so relieved because I did not want to do another 18 miler after yesterday.

We are considering changing our second 20 miler into a 22 miler, but we will see. AR would really like to, just as a confidence boost, but I am not so sure. Maybe if it cools down a bit.

Friday Confessions

Hello all! It is time for some good 'ol confessions, back to school style!



- I confess that I had some serious anxiety after my first Antitrust law class. We did math the entire time. Math, as in, calculating the equations of lines and determining the present value. It was not my most favorite moment.

- I confess that I had wine and cereal for dinner last night. Not at the same time though, I promise! I went to a Moot Court meeting at 8pm and they had drinks, so I had some wine. By the time I got home, it was almost 11 and I had no interest in food. I knew I needed to eat something, so I had cereal. Not exactly the best dinner choice.

- I confess that I am so overwhelmed with classes and reading and job searching. I almost want to cry about it. Everyone else seems really excited, but I feel overwhelmed.

- I confess that I am so excited about Moot Court this year. We did speed dating rounds yesterday with each of the different teams to learn more about them and I loved everyone!! Seriously, I would be happy on any team, from bankruptcy to criminal procedure. I know, I am clearly a law school nerd. I own it. :)

- I confess that I still hurt from my fall this week. My hands look a *little* better and my knees are an excellent combination of scab and bruise. It is beautiful.

Leg & Hip Stretches (& my weekend!)

I didn't do a weekend recap this week. Why? Because I spent the entire weekend either running or stressing about school starting. (Am I the only person who gets severe anxiety about the first day of school?) No idea why I worry so much, but I do. I left for class on Monday 75 minutes early, just because I was worried. I feel ridiculous.

I got up and ran this morning at the gym. I honestly limped to the treadmill and started jogging very slowly. About a half of a mile in, I contemplated going home because it hurt so badly and I was hobbling along.

I took a moment to check my body - I know the difference between pain and soreness, and this really was just soreness. I ran an 8 mile pace run on Saturday, 17 miles on Sunday, and took a pretty nasty fall. My poor body was just tight.

I slowed the pace down and a few miles later, I was happy and able to get back to pace. My body just needed to stretch out.

I plan to have a serious stretching session tonight. I know this is something I have neglected in my marathon training, and I need to address it now before I really do get an injury. During my last training plans, I was actively attending yoga at a near-by studio, but this time around, I just haven't.

Marathon Training: Wk 11 [i took a fall}

It got real this weekend, friends.

41 miles. This girl ran 41 miles this week. Heck. Yes. 

Here is how those runs broke down. I don't remember my pace for all of them (oops), so I'll include what I have.

Monday - rest

Tuesday - 4 miles outside in the sunshine. It was pretty hot and wonderful, actually :) Ab work and stretching in the evening.

Wednesday - 8 miles on the treadmill. Law and Order was on, and it kept me beautifully distracted. I ran all 8 at about a 9:20 mile, which is slower for me. Ab work and stretching in the evening.

Thursday - 4 miles on the treadmill. I ran on the treadmill in the afternoon because I had an appointment early in the day. I was pretty sore from the longer run the day before.

Friday - rest

Saturday- I slept in. Way in. And then I chatted with my brother on the phone for an hour, so I didn't hit the gym until after 1pm. I had only had a wheat biscuit for breakfast and I was pretty hungry. I did 8 miles at an average pace of 8:40 with negative splits the whole way!

Sunday - 17 miles at a 10 minute pace. Oh goodness. I started early and it was still dark outside. Of course, I tripped less than a mile in and wiped out on the side of the road. Seriously, I did a Superman impression and hit the ground on all fours, scrapping up both hands, arms, knees, and legs. AR offered to go back home and clean up, but I said no. So I did 16 more miles as a bloody mess. My hands hurt so badly. Other than that disaster, the run was pretty good and I felt happy with our pace and my leg strength.



When I got home after the run, I stretched while AR showered. He made a Walgreens run while I was in the shower for hydrogen peroxide band-aids, and neosporn. I now have 4 large band-aids on my body, which is slightly embarrassing. I will look gorgeous tomorrow on the first day of class.

I made my self feel slightly better with a large cinnamon roll that I bought at Whole Foods. These babies have 320  calories a pop and I had 1.5. I should be worried, but I ran 25 miles in 24 hours this weekend. I'm owning it and enjoying the treat!

Don't worry, that is a salad plate, not a dinner plate ;)

Resting up for class tomorrow and then I start an even worse running week - 44 miles culminating at an 18 mile long run. I am sure I will want to die at the end of it.

Confessional Friday

Happy Friday and welcome to a good ol' 'fesh sesh. Linking up with the beautiful Leslie today!



I confess that I made biscuits and gravy again this morning. I'm eating it with yogurt topped with chia seeds and hemp hearts. That is balance, right?

I confess that I have no plans besides running this weekend. I'm running 8 miles at marathon pace tomorrow and 17 miles on Sunday. This is gonna be a fun weekend :/

I confess that I have a legal brief due on Wednesday and I have NOT EVEN READ THE ISSUE!! I.E., I don't even know what the brief is about. For people who are joyfully not in law school, this brief is a 16-18 page research paper. Procrastination at its finest.

I confess that I painted my nails with clear polish for interviews and I really like the way it looks. Normally I would scoff at this and reach for the neon pink, but I am loving the clear polish.

I confess that I came home yesterday to 4 men installing new french doors in my living room. Yay for the new doors, but sad for me. First, I had to pee and I didn't want to do that with strangers in my home. Second, I wanted to go for a run, but I was afraid they would be there when I came back, and then I wouldn't be able to take a shower. So I sat on my bed awkwardly until they left.

I confess that I haven't bought any of my books for school and class starts on MONDAY. Yep, once again, procrastination. Apparently I am in denial about school :(

Weekending!!

Happy Monday! Linking up with the lovely ladies for a little weekending!

Today marks my last week of freedom before school starts up again :(

I cannot believe that the summer is drawing to an end. I need another 5 weeks. Anyone else?

On Friday evening, AR and I went to dinner at a place we run past all of the time: No. 246 in Decatur!



If you are in the Atlanta area, you need to visit this spot. It gets going around 8pm and the menu changes with each season. There are so many excellent options (try the stuffed mushrooms) and the wine list is exceptional.

The real star? The Spoom. It is an italian meringue ice cream that is killer. They serve it in a huge waffle cone with two spoons. I'd send the extra spoon back, but AR might be offended and I was in some super skinny jeans. 

On Saturday, I woke up very early to head to my first training with the Junior League of Atlanta!!



I am so excited and honored to be part of this historic and transformative organization. I cannot wait to get to know the other women better and become a part of their work in Atlanta.

AR had to work Saturday, so my friend Luci and I did what we do best: shop.

I found some amazing deals on jeans at Nordstrom Rack. I wanted like 4 pairs, but settled on a new pair of J Brand skinnies for a quarter of the regular price. I was thrilled :)

Side Note: Apparently Kate Middleton wears JBrand skinnies that are identical to mine. I always knew we were twins.

On Sunday, I completed my run in some rainy weather and AR convinced me to go to Whole Foods before I showered. He tried to lure me with iced cold press coffee and a quick trip, but I've never had a quick trip to WF in my life. I got to walk around the store for an hour looking disgusting and smelling even worse.

We settled on produce for the week and made a batch of homemade biscuits and turkey sausage gravy for breakfast.


Don't worry, I tried to balance the decadent weekend with a salad for dinner!

Marathon Training: Week 10 (lets be flexible)

10.

TEN.

10 weeks in, about 10 to go. Marathon training is getting real. This is the point in training when I eat like a cow all of the time. It is almost embarrassing, but not quite.

This week was a pull back week - after running 14 miles on our long run, and then 15, this week was shortened. Here is what my week looked like:

Monday - rest
Tuesday - 4 miles on the TM
Wednesday - rest (stolen from Friday to push my other runs back. I had a really long day scheduled). 
Thursday - 5 miles
Friday - 3 miles. This was suppose to be 4 miles, but I made the poor choice to go running outside at about noon. It was so hot and humid and I was miserable, so I wimped out and went home. :(
Saturday - rest, for the first time in 10 weeks!!!!!
Sunday - 10 very very humid miles.

This week got a little jumbled due to scheduling, but I got almost all of the miles in. Sometime life gets hectic and it is important to move with it. I've learned to make it work most of the time, but also to be real. If Wednesday goes from 7am-9pm, switch it with Friday's rest day!!

Sure, plans are designed to flow a certain way. That is why I stick to my plan almost all of the time. But plans aren't perfect. Sometimes life happens and we have to go with it. 

I didn't leave for my long run on time on Sunday, which meant I had to suffer through some hot and humid miles, complete with off-and-on rain. By the time I got home, I had no energy or appetite. I just wanted a shower and water.

Not looking forward to this week of running, I'll be honest. I am running 8 miles at pace on Saturday and 17 on Sunday. This is not my idea of an excellent running plan for Atlanta in August!!!

Friday Confessions

Friday Confessions. Oh Yes. So so many.

1. I confess that tomorrow is my orientation for the JUNIOR LEAGUE of ATLANTA!!! I am so so excited. I went to my first event with them about 4 months ago and have been so excited to join since. Any fellow JL members?

2. I confess that I am addicted to the Urban Decay Make-up Setting Spray. Now sure why it took me so long to try this product, but I love it. It makes my make-up look more evenly set and it stays! I am not very oily or shiny, but in the Atlanta humidity, my make-up can melt. I sprayed this stuff on my face on Tuesday at 8:30 and it was still going strong 12 hours later. Love that.



3. I confess that I have not cooked a meal this week, unless I count Sunday. I've lived off leftovers and yogurt. And veggie burgers that I heat up (I don't count those as cooking). I am going to remedy that this weekend, I promise.

4. I confess that I really think Chanel lipstick it amazing and better than my drugstore varieties. I wish I didn't feel this way. I wish I didn't have a Chanel lipstick to compare mine too. I should not have bought it.



5. I confess that I woke-up yesterday morning wanting to clean my apartment. Badly. How weird is that? I scrubbed for several hours and then walked to the gym feeling very accomplished.  I then proceeded to do very little for the rest of the day... oops.

6. I confess that I made reservations for tonight's dinner based completely on the dessert. This place has the most amazing ice cream made in house. The chocolate sea salt flavor it to die for. I'll be sticking to wine and ice cream, for sure.

7.  I confess that I am completely neurotic about ordering books for school. I obsessively monitor Ebay, Amazon, Barnes & Nobles... everyone. It's like my deal-finding prowess magnifies ten fold. Today I plan on placing my final orders. Maybe.

Sad Shoe Moment


Hey all!

I'm sad to be missing the WIAW party today... I didn't take pictures of my food because this week has been a little hectic. I am in the middle of interviews and prepping for school to start, which is exhausting. I cannot believe summer is almost over!!!

Last night I attended a reception and wore new shoes that I thought were comfortable. After 2.5 hours on my feet, I had a different opinion.

I don't know how I made it to my car and home, but  hobbled into my apartment and was in my fuzzy socks in about 2 seconds. Does anyone else wear these socks around the house? They are crazy attractive, I know. I own about 10 pairs of them and wear them almost every day.

Confession: Mine aren't even a nice color like this picture. I go for the sexy, neon pink/green/purple/animal messes available at Bath & Body Works. Yep.

Marathon Training {week 9} & Weekending!

Oh Monday. You came too soon. 

This weekend started early when AR flew in early Friday afternoon. We went to the grocery store and bought something to cook for dinner, but by the time we got home, we had a change of heart. We were just discussing getting take out when friends called and asked us so come meet them for dinner.


We went to a local pizza place, which recently put in an adorable outdoor bar across the street. We sat outside, munched on roasted artichokes, and sipped fizzy drinks. Mine? peach puree and champs. #yummmm 

Eventually, the smell of pizza temped us and we all split a pizza with fresh mozzarella and cherry tomatoes. If you are ever in ATL, go to Antico Pizza. The atmosphere is crazy, but the pizza is unbeatable! 

After I finished my peach drink, I switched to a san pelligrino and bottle of water because we had lots of running ahead. 

This week, I ran:
M- rest
T- 5 miles
W- 7 miles
Th- 5 miles
F-rest
S- 6 miles + 3 mile walk. 

On Saturday morning, AR and I did our run at the gym, and then walked to our favorite brunch spot in midtown. We sipped iced coffee and chatted outside for an hour before walking back home. 

Saturday was a major shopping day - it was Tax Free Weekend in Georgia. I had plans to buy a new laptop for school, which gave me ridiculous anxieties. I pretty much hate making big purchases. I ended up getting a fabulous deal on a new MacBook Air, so I am thrilled. 

Yes, I highlight over each run after I'm done. I'm pretty much still an elementary school teacher.
Sunday was a 15 mile run. 

I didn't prepare enough. I had exactly 7 energy jelly beans for AR and I to split as fuel (that was going to last long). It was hot and sunny, but we did it! My legs were pretty sore from this week and I could feel the run in my hips. Ow. 

I felt decently strong until mile 11, when my feet and hips started hurting. Next week is a much shorter week, thank heavens, with only a 13 miler on the weekend. When we finished, I showered and climbed back in bed for a bit.

Dinner on Sunday night was a fabulous event: roasted turkey tenderloin with a homemade mushroom gravy, sweet english peas, and mashed red potatoes.

Weekend Eats: Lima Bean Hummus!

Hello everyone!

I popping in over the weekend to share an awesome recipe from Friday night: Lima Bean Hummus!

I saw a container of this at Whole Foods last weekend and it got me thinking. I had a rather large bag of frozen lima beans in my freezer that needed a home. So I decided to attempt the hummus.

After looking at a few recipes, I combined two, using this one from Food & Wine magazine, but adding some fresh parsley.

I boiled the beans for 20 minutes, rinsed them in cold water, and them blended them with lemon, olive oil, garlic, and parsley. The result?

A fluffy, garlicky green dip that is awesome on veggies or chips.

Lima Bean Hummus
Makes about 2 cups

16 ounces of frozen lima beans (just over 2 cups). thawed
2 cloves of garlic
1/4-1/3 cup of olive oil
zest of one lemon
1 tablespoon of lemon juice
4-5 springs of parsley, stems removed
1 teaspoon of salt
fresh black pepper

Boil lima beans in water for 20 minutes to soften. Drain the beans and cool. Meanwhile, zest lemon and combine with lemon juice, parsley, garlic, salt & pepper, and olive oil in a food processor or blender. Start with only a quarter cup of the olive oil - you can add more if needed. Blend the ingredients until combined. Add cooled beans and blend until smooth, adding more oil if needed. Enjoy with chips and veggies.
Store in airtight container in refrigerator.

Friday Confessions

Friday, you have finally arrived! Linking up with the gorgeous Leslie for a little Friday Confessions.

1. I confess that it took me like 25 minutes to pick out a nail color yesterday at the salon. First, I picked out my colors. With all my interviews coming up, I wanted something light and neutral for my fingers and something fun for my toes (which will be hidden). But after the original colors, I changed my mind. Like 4 more times. Mind you, I was holding 10 bottles of neutral pale pink that all looked the SAME. Really, no one can probably tell the difference between Bubble Bath and Ballet Slippers. *sigh* I went with ballet slippers. 

2. I confess that I did not drink any coffee yesterday or Tuesday and it was sad. It isn't that I need the caffeine. I often only have one cup. I just like the flavor and the activity of drinking coffee. So I am drinking some right now. 

3.  I confess that I wore a plastic bag on my head yesterday. In public. While at the nail salon, it started pouring. Of course, my umbrellas were all in the car. So my friend Luci and I grabbed plastic bags and tied the over our head and hair. I had just washed my hair and really didn't want to do it again today... I pray no one I know saw me walking downtown with a bag over my head. 

4. I confess that I ran all my miles this week and feel horrific. This is not the part in the marathon training plan that makes you feel awesome. It is the part that makes you feel so sore you want to cry. I got in the car for Barre one day this week and thought "nope, not happening" and went back home. 

5. I confess that I have had the same breakfast every day this week and I don't mind. Homemade granola, yogurt, fruit, chia seeds, and hemp hearts. So good.
